My Nanny used to make eggs OFTEN. Almost always for breakfast and sometimes for dinner. The yolk was just right — all the white done and the yellow stayed runny. She typically used bacon grease and would slosh that up over the top of the yolk. They were over easy perfect.
Today, I read an article about how to make Spanish Fried Eggs. (Herein after referred to as SFE.) I had to click when it said, “once you try them, you’ll never cook them any other way.” Obviously, the author never had Nanny Fried Eggs.
SFE are made with at least 1/4 of an inch olive oil or butter in your pan. They call the sloshing process ‘basting in oil.’ That’s the same process Nanny always used, but the secret for the SFE is “crispy, golden-brown edges.” I don’t want my egg whites crispy! I pull crispy egg parts off — made when the skillet is too hot — to throw away or feed to the doggies.
And I would rather starve than eat an avocado. I sure wouldn’t put that stuff on a perfectly good slice of bread. Still love eggs prepared just about any way. Except SFE evidently.
I’m still on the Bernie in mittens thing. I posted the photo of Scott and Bernie on Facebook. Jerilyn commented something about being MUCH younger and I might get payback. I thanked her for the warning and said I had a warning for her in return. I posted this:
