Nanny made the best persimmon pudding I’ve ever eaten. My Aunt Shirley made some great persimmon pudding too. Along comes Katie and she replicates her g’ma’s recipe (Aunt Shirley) — and makes a mean rendition of my favorite dessert.
So I compared the recipes, and found they’re really different.
I decided to try Nanny’s recipe… and BAM! It’s amazing. I know because I tasted it even before I took a photo of it.
If you have pulp, you gotta make this…
So I’m going to share Nanny’s recipe.
INGREDIENTS:
- 2 c pulp
- 2 c sugar
- 2 eggs
- 1 ½ c buttermilk
- 1 t baking soda
- 1 ½ c flour
- 1 t baking powder
- 1 t vanilla extract
- ½ t cinnamon
- ¼ c milk
- ½ stick butter
DIRECTIONS:
- Mix 2 c pulp and 2 cups sugar together. Add 2 eggs and mix.
- Mix 1 ½ c buttermilk and 1 t baking soda together.
- 1 ½ c flour, 1 t baking powder, 1 t vanilla extract and ½ t cinnamon, ¼ c milk.
- Put .5 stick butter in 9×13 pan melt to cover – pour the rest of the butter in the batter.
- Bake 50 minutes at 350°.
SAUCE:
- 3/4 cup brown sugar
- 1 Tablespoon butter
- 1 1/4 cups water
- Bring to boil and pour over warm pudding when done.
