Last week, all Colette could talk about were smelly erasers shaped like ice-cream.  Her version of the story is that some kids got them, but she had not. “I kept waiting every day… but I never got one and I REALLY wanted one.” 

Sadly, I’m guessing they were a reward for some activity or behavior that she didn’t exhibit. Of course, the last thing you want to do is make a child think they don’t have to perform well at school and they’ll still receive the same reward at home, but this item is exactly the type of thing Coco loves. So much so, her Dad had ordered these crazy erasers without knowing they would be some ‘prize’ at school. They finally came in the mail on Saturday.

my weekend is over

I can’t believe my weekend is over.  While I try to make those 2 non-workdays relaxing and uneventful, things don’t always work out as planned.  I started out at the grocery store and progressed to being a tutor — helping write a college essay. Because it was to be autobiographical and wasn’t about me, that task wasn’t nearly as easy (or quick) as I’d hoped.

As the primary weekend cook (I managed quite well, thank you very much), I spent quite a bit of time in the kitchen as opposed to the couch with my laptop and TV remote. Someone else got that job…

Sometimes I really do cook… and sometimes, it’s even edible. I never salt or pepper anything enough for Ben, but he did throw out more than the usual number of kind comments about this meal — Chicken Lazone. When compliments about a dish I have prepared are not prefaced with any remarks about the smoke detector going off, it makes me happy.

Y’all should try this — it’s easy. 🙂

CHICKEN LAZONE

1/2 tsp salt
1 1/2 tsp chili powder
1 1/2 tsp onion powder
2 tsp garlic powder
1/4 tsp cayenne pepper
2 lb chicken tenders
1/4 cup butter, divided
2 cups heavy cream

Combine salt, chili powder, onion powder, garlic powder, and cayenne pepper. Sprinkle over both sides of chicken tenders.

In large saute pan, melt half of the butter over medium-high heat. Cook the chicken tenders until done, about 8 minutes.

Pour the cream and remaining butter into the skillet. Lower heat and simmer until the sauce thickens, about 5-7 minutes. Serve chicken and sauce over pasta or mashed potatoes, if desired.
