my latest cooking experiment

Dec 14, 2020

In 2018 I saw a recipe on Facebook. I don’t know why I saved it or why I decided to give it a whirl last night, but I did! The end product’s photo looks like one of those weird close-up photos of nature — like… here’s a fly’s eye magnified a bajillion times.

I’m hoping the peskies read this and see the photo so they won’t ask me to send some home with them. Why? Because they taste SO AMAZING I don’t want to share!

candied pecans

You know the recipe is easy or I couldn’t handle it. I promise these nuts taste much better than they photograph.

Brown Sugar Vanilla Pecans
1 egg white
1/2 cup packed brown sugar
a dash of vanilla extract
2 cups of pecans
Preheat oven to 275 degrees. Line a cookie sheet with wax paper and spray the paper with cooking spray. Beat the egg white until stiff. Add the brown sugar and vanilla and stir until smooth. Dump in the pecans and stir until coated. Pour the nuts onto the prepared cookie sheet and bake until browned — about 10-15 minutes.

How severe the pandemic is in the places where people I care about are located…
Daily new COVID-19 cases (7 day moving average):
Indiana-94.6 (down a tad); Jackson Co – 123.1 (up) — 7.23% infected (up); Florida 45.3 (up); Nevada – 81.1 (down)

TIL (today I learned): Charley Pride couldn’t make the majors in baseball, so he did something even more improbable—he became the first black superstar in country music. RIP Charley Pride. 🙁
