Last week someone shared a recipe for peanut butter cookies. I made those 3 ingredient COVID cookies and they were AWFUL, so I was more than a bit intimidated to even try that again. But since I am the proud owner of a stand mixer, I felt it was my duty to give cookies another shot.
If you’re playing along at home, here’s the recipe I used:
I already had everything needed but I added some new silicone spatulas to my shopping list this week — and today I rose to the baking challenge. I put the bowl of ingredients under the stand mixer and it was finished before I realized I was supposed to use TWO eggs and not THREE. Ooops! Next, I took one of my awesome new spatulas and went around the inside of the bowl for a final stir.
Sticky dough matted to my spatula, I took my finger to push it off. The rubber flipped and cookie dough splatted my face… covering one lens of my glasses. My helpers were watching from a safe distance and I figured they’d like licking the spatula. Nanny used to let me do that and I thought it was great!
So Merida took one lick… and then she clamped down pulling the rubber paddle off the wooden handle and ran. I chased her through the house with vision in the one eye not coated with dough. I cleaned my glasses, threw the new spatula in the trash, and put the dough in the frig for an hour.
Fast forward to me rolling little balls of dough and flinging them off sticky fingers onto a cookie sheet. This recipe makes 4 dozen… but knowing my skill level, I only baked ONE dozen to see if they were edible. No need to bake them before throwing them in the trash, right? I did 6 with the fork flattening and 6 to put Hershey Kisses in.
And that’s why bakers around the world are celebrating! They really ARE edible, you guys!!
If not for COVID, I’d bake the other 3 dozen right now and deliver them to all my neighbors. Once word got around I’d be doing weddings and birthday parties and shit. And then, my buddy, Alisa, would partner with me to host a virtual baking show where we could sell memberships and reveal secret new recipes.
